Instructions
- Step 1: Begin by placing the pitted Medjool dates in a food processor and pulse until they form a sticky paste. You may need to scrape down the sides a few times to ensure even consistency.
- Step 2: Next, add the natural peanut butter to the date mixture and blend until well combined and smooth. The mixture should be thick and easily moldable.
- Step 3: Line a small baking dish or tray with parchment paper. Press the date and peanut butter mixture evenly into the bottom of the dish to form a layer about 1/2 inch thick.
- Step 4: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in short intervals of 20 seconds, stirring in between, until the chocolate is melted and smooth.
- Step 5: Pour the melted chocolate over the pressed date and peanut butter layer, spreading it evenly with a spatula. Sprinkle sea salt and chopped peanuts on top if desired. Place the dish in the refrigerator for about 30 minutes to set.
