Ingredients
- All-purpose flour: 2 1/2 cups
- Unsalted butter, softened: 1 cup
- Brown sugar: 1 cup
- Granulated sugar: 1/2 cup
- Apple cider: 1/2 cup
- Egg: 1 large
- Baking soda: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Powdered sugar: 2 cups
- Brown sugar: 2 tablespoons
- Milk: 3-4 tablespoons
- Vanilla extract: 1/2 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and apple cider until well combined.
- Step 2: In a separate bowl, whisk together the flour, baking soda, and cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 3: Drop rounded tablespoons of dough onto ungreased baking sheets, leaving some space between cookies.
- Step 4: Bake for 8-10 minutes, or until the edges are lightly golden brown. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Step 5: While the cookies are cooling, prepare the glaze. In a medium bowl, whisk together the powdered sugar, brown sugar, milk, and vanilla extract until smooth. Add more milk, one tablespoon at a time, if needed to reach your desired consistency.
- Step 6: Once the cookies are completely cool, drizzle the glaze over the top of each cookie. Let the glaze set before serving. Enjoy!
Notes
- Store cooled cookies in an airtight container at room temperature to maintain their soft texture.
- Gently warm glazed cookies in the microwave for a few seconds to enhance the cider aroma before serving.
- These cookies are wonderful with a scoop of vanilla ice cream or alongside a warm mug of apple cider.
- For a richer apple flavor, reduce the apple cider in a saucepan by half before adding it to the batter.
