- 1 1/2 pounds sweet potatoes
- 1 (14 ounce) can sweetened condensed milk
- 1/2 cup (1 stick) unsalted butter, melted
- 2 large eggs, lightly beaten
- 1/2 cup granulated sugar

- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1 (9-inch) unbaked pie crust
Instructions
- Step 1: Preheat oven to 350 degrees F (175 degrees C). Bake sweet potatoes until soft, about 45-60 minutes. Let cool slightly, then peel and mash. You should have about 2 cups of mashed sweet potatoes.
- Step 2: In a large bowl, combine mashed sweet potatoes, sweetened condensed milk, melted butter, eggs, sugar, cinnamon, nutmeg, and ginger. Mix well until smooth and creamy.
- Step 3: Pour the sweet potato mixture into the unbaked pie crust.
- Step 4: Bake in the preheated oven for 50-60 minutes, or until the filling is set and a knife inserted near the center comes out clean.
- Step 5: Let cool completely before serving. Refrigerate leftovers.
Notes
- For best flavor, refrigerate the pie for at least 4 hours (or overnight!) after baking to allow the spices to fully meld.
- Gently warm individual slices in the microwave for 30 seconds for a taste of warm, comforting goodness.
- A dollop of whipped cream or a sprinkle of toasted pecans makes this pie even more irresistible.
