- Arugula, 5 ounces
- Fresh Blackberries, 1 cup
- Fresh Peaches, 2 medium, pitted and sliced
- Red Onion, 1/4 cup, thinly sliced
- Goat Cheese, 4 ounces, crumbled
- Honey, 2 tablespoons
- Lime Juice, 2 tablespoons
- Olive Oil, 3 tablespoons
Instructions
- Step 1: In a small bowl, whisk together the honey, lime juice, and olive oil until well combined. This is your honey-lime dressing.
- Step 2: In a large bowl, combine the arugula, blackberries, peach slices, and red onion.
- Step 3: Gently toss the salad ingredients together.
- Step 4: Drizzle the honey-lime dressing over the salad. Use as much or as little as you prefer.
- Step 5: Gently toss again to ensure the salad is evenly coated with the dressing.
- Step 6: Sprinkle the crumbled goat cheese over the top of the salad. Serve immediately.
Notes
- To prevent the arugula from wilting, dress the salad just before serving.
- Store leftover salad undressed in an airtight container in the fridge for up to 24 hours; the fruit may soften slightly.
