- 1 (25 ounce) package cheese tortellini
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (24 ounce) jar of your favorite pasta sauce
- 1 (10 ounce) can diced tomatoes and green chilies (Rotel), undrained
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 375°F (190°C). Cook tortellini according to package directions. Drain well and set aside.
- Step 2: While tortellini cooks, brown ground beef in a large skillet over medium-high heat. Drain off any excess grease. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more.
- Step 3: Stir in pasta sauce, Rotel, oregano, salt, and pepper. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
- Step 4: In a large greased 9×13 inch baking dish, combine the cooked tortellini and the meat sauce. Stir gently to combine.
- Step 5: Sprinkle mozzarella and Parmesan cheese evenly over the top.
- Step 6: Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly. Let stand for 5 minutes before serving.

- Leftovers store beautifully in the fridge for up to 3 days – simply reheat individual portions.
- For perfectly reheated portions, microwave uncovered for 1-2 minutes, or until heated through, adding a splash of water to prevent dryness.
