- 1 pound ground beef
- 1 packet taco seasoning (1 ounce)
- 1/2 cup water
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 flour tortillas (8–10 inch)
- Sour cream, for serving (optional)
Instructions
- Step 1: In a large skillet, heat olive oil over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess grease.
- Step 2: Stir in taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the liquid has been absorbed.
- Step 3: Sprinkle cheddar and Monterey Jack cheeses evenly over the ground beef mixture. Stir until the cheese is melted and well combined.
- Step 4: Heat a large skillet or griddle over medium heat. Place one tortilla in the skillet and spread about 1/4 cup of the ground beef and cheese mixture evenly over half of the tortilla.
- Step 5: Fold the other half of the tortilla over the filling to create a quesadilla. Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted and gooey.
- Step 6: Remove the quesadilla from the skillet and cut into wedges. Serve immediately with sour cream, if desired. Repeat with remaining tortillas and filling.
Notes
- Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days.
- For the best reheating results, warm the quesadillas in a dry skillet over medium heat until heated through and crispy, avoiding a microwave if possible.
- Serve these cheesy quesadillas with your favorite salsa and a dollop of guacamole for a complete and satisfying meal.
- For extra flavor, try adding a can of drained and rinsed black beans or corn to the ground beef mixture while it's simmering.
