Ingredients
Scale
- 1/2 cup (1 stick) butter
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 6 cups Special K cereal
- 1 teaspoon vanilla extract
- 1/2 cup peanut butter
- 1/4 teaspoon salt
Instructions
- Step 1: In a large saucepan, melt the butter over medium heat.
- Step 2: Add the sugar and corn syrup to the melted butter. Stir constantly until the mixture comes to a full rolling boil.
- Step 3: Remove the saucepan from the heat and stir in the peanut butter, vanilla extract, and salt until well combined.
- Step 4: Pour the mixture over the Special K cereal in a large bowl. Gently fold the cereal until it is evenly coated.
- Step 5: Press the cereal mixture into a lightly greased 9×13 inch pan.
- Step 6: Let the bars cool completely before cutting them into squares.
Notes
- Store cooled Special K bars in an airtight container at room temperature for up to 5 days to maintain their chewy texture.
- While not usually reheated, a quick zap in the microwave (5-10 seconds) will soften them slightly for an extra gooey treat.
- Cut into smaller squares for easy snacking or pack a bar in a lunchbox for a delightful midday pick-me-up.
- For easier pressing, lightly grease your hands with butter or cooking spray to prevent the cereal mixture from sticking.
