Ingredients
- Chicken sausage, sliced: 1 pound
- Sweet potatoes, peeled and cubed: 2 medium
- Olive oil: 2 tablespoons
- Garlic, minced: 4 cloves
- Honey: 3 tablespoons
- Soy sauce: 2 tablespoons
- Red pepper flakes: 1/4 teaspoon (optional)
- Fresh parsley, chopped: 2 tablespoons
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
- Step 2: Roast the sweet potatoes in the preheated oven for 20 minutes, or until they are slightly tender.
- Step 3: While the sweet potatoes are roasting, prepare the honey garlic sauce. In a small bowl, whisk together the honey, soy sauce, minced garlic, and red pepper flakes (if using).
- Step 4: Remove the sweet potatoes from the oven. Add the sliced chicken sausage to the baking sheet with the sweet potatoes. Drizzle the honey garlic sauce evenly over the sweet potatoes and sausage.
- Step 5: Return the baking sheet to the oven and bake for another 15-20 minutes, or until the chicken sausage is cooked through and the sweet potatoes are tender and slightly caramelized.
- Step 6: Garnish with fresh parsley before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheat in the oven or air fryer to re-crisp the sweet potatoes.
- Serve over rice or quinoa to soak up that delicious honey garlic sauce!
- For extra flavor, brown the sausage in a pan before adding it to the sweet potatoes.
