- Cottage cheese, low fat: 16 ounces
- Frozen mixed vegetables: 10 ounces
- Eggs: 2 large
- Shredded cheddar cheese: 1 cup
- Onion, chopped: 1/2 medium
- Garlic powder: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Black pepper: 1/4 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
- Step 2: In a large bowl, combine cottage cheese, frozen mixed vegetables (no need to thaw), chopped onion, eggs, garlic powder, salt, and pepper. Mix well until everything is evenly distributed.
- Step 3: Pour the cottage cheese mixture into the prepared baking dish, spreading it out evenly.
- Step 4: Sprinkle the shredded cheddar cheese evenly over the top of the cottage cheese mixture.
- Step 5: Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and golden brown and the cottage cheese mixture is set.
- Step 6: Let the bake cool for a few minutes before serving.
Notes
- Leftovers keep well in the fridge for up to 3 days in an airtight container.
- For best results, reheat individual portions in the microwave until warmed through.
- Serve a slice with a dollop of sour cream or plain Greek yogurt for extra creaminess.
- To prevent a watery bake, be sure to drain any excess liquid from the frozen veggies after mixing.
