Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin.
- Step 2: In a large bowl, whisk together the cottage cheese, eggs, garlic powder, salt, and pepper until well combined.
- Step 3: Stir in the chopped spinach, diced onion, and shredded cheddar cheese into the egg mixture.
- Step 4: Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Step 5: Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and lightly golden brown.
- Step 6: Let the egg bites cool in the muffin tin for a few minutes before removing and serving.
