Ingredients
- Boursin cheese (garlic & fine herbs): 5.2 oz
- Baguette: 1 loaf
- Cherry tomatoes: 1 pint
- Fresh basil leaves: 1/4 cup
- Olive oil: 3 tablespoons
- Balsamic glaze: 2 tablespoons
- Garlic clove: 1 clove
- Salt and pepper: to taste
Instructions
- Step 1: Preheat oven to 400°F (200°C). Slice the baguette into 1/2-inch thick rounds.
- Step 2: Brush both sides of the baguette slices with olive oil. Place the slices on a baking sheet in a single layer and bake for 8-10 minutes, or until lightly golden brown and crisp.
- Step 3: While the baguette is baking, halve or quarter the cherry tomatoes, depending on their size. Roughly chop the fresh basil. Mince the garlic clove.
- Step 4: In a medium bowl, combine the halved/quartered cherry tomatoes, chopped basil, minced garlic, a drizzle of olive oil, salt, and pepper. Toss gently to combine.
- Step 5: Once the baguette slices are cooled, spread a generous amount of Boursin cheese on each slice.
- Step 6: Top each bruschetta with the tomato mixture and drizzle with balsamic glaze before serving.
Notes
- Store leftover tomato topping separately from the toasted baguette and Boursin to prevent sogginess.
- Reheat the baguette slices briefly in a warm oven to re-crisp before assembling if made ahead of time.
- Garnish the finished bruschetta with an extra sprinkle of fresh basil for a pop of color and aroma.
- For a richer garlic flavor, rub a raw garlic clove over the toasted baguette slices before adding the Boursin.
