Instructions
- Step 1: Place the beef stew meat in the crock pot.
- Step 2: Add the potatoes, carrots, and onion to the crock pot.
- Step 3: In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and thyme. Pour the mixture over the beef and vegetables in the crock pot.
- Step 4: Cover the crock pot and cook on low for 7-8 hours or on high for 3-4 hours, or until the beef and vegetables are tender.
- Step 5: Stir well before serving. You can thicken the stew with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking, if desired.
