Delicious crock pot beef stew recipe recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Beef Stew Meat: 2 pounds
  • Potatoes, peeled and cubed: 3 large
  • Carrots, peeled and chopped: 3 medium
  • Onion, chopped: 1 medium
  • Beef Broth: 4 cups
  • Tomato Paste: 2 tablespoons
  • Worcestershire Sauce: 1 tablespoon
  • Dried Thyme: 1 teaspoon

Instructions

  1. Step 1: Place the beef stew meat in the crock pot.
  2. Step 2: Add the potatoes, carrots, and onion to the crock pot.
  3. Step 3: In a separate bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and thyme. Pour the mixture over the beef and vegetables in the crock pot.
  4. Step 4: Cover the crock pot and cook on low for 7-8 hours or on high for 3-4 hours, or until the beef and vegetables are tender.
  5. Step 5: Stir well before serving. You can thicken the stew with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking, if desired.

Notes

  • Store leftover beef stew in an airtight container in the refrigerator for up to 3 days.
  • For best results, reheat the stew gently on the stovetop over medium-low heat, adding a splash of beef broth or water if needed to prevent sticking.
  • Serve this hearty stew with a crusty loaf of bread for dipping into the savory broth.
  • For richer flavor, sear the beef in a skillet before adding it to the crock pot.
