  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 English Cucumber, sliced 1/4 inch thick
  • 8 oz Fresh Mozzarella, sliced 1/4 inch thick
  • 1 pint Cherry Tomatoes, halved
  • 1/4 cup Fresh Basil Leaves, roughly chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Balsamic Glaze
  • 1/4 teaspoon Sea Salt
  • 1/8 teaspoon Black Pepper

Instructions

  1. Step 1: Arrange cucumber slices on a serving platter in a single layer, overlapping slightly.
  2. Step 2: Place mozzarella slices on top of the cucumber, also overlapping slightly.
  3. Step 3: Scatter the halved cherry tomatoes evenly over the mozzarella and cucumber.
  4. Step 4: Sprinkle the chopped fresh basil leaves over the entire salad.
  5. Step 5: Drizzle the extra virgin olive oil and balsamic glaze over the salad.
  6. Step 6: Season with sea salt and black pepper to taste before serving.

Notes

  • To prevent a soggy salad, only dress it right before serving.
  • Store leftovers in an airtight container in the refrigerator, but note that the cucumbers may release water.
  • This salad is a refreshing appetizer, but it also pairs beautifully with grilled chicken or fish for a light meal.
  • For the best flavor, use high-quality balsamic glaze and a flavorful extra virgin olive oil.
