- 1.5 lbs Boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup All-purpose flour
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 2 large Eggs, beaten
- 3 cups Popcorn, popped (no butter or salt)
- 1 cup Honey BBQ sauce
- 2 tablespoons Olive oil
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a shallow dish, combine flour, salt, and pepper. In a separate shallow dish, place the beaten eggs. In a third shallow dish, add the popped popcorn.
- Step 3: Dip each piece of chicken into the flour mixture, then into the egg, and finally press into the popcorn, ensuring it is fully coated.
- Step 4: Place the coated chicken pieces onto the prepared baking sheet, making sure they are not overcrowded. Drizzle with olive oil.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and the popcorn is golden brown and crispy.
- Step 6: Remove from oven and toss the baked popcorn chicken with the honey BBQ sauce. Serve immediately.

- Store leftover popcorn chicken in an airtight container in the refrigerator for up to 3 days.
- For the crispiest reheat, spread the chicken on a baking sheet and bake at 350°F (175°C) until warmed through.
