Instructions
- Step 1: In a medium bowl, combine the Greek yogurt, peanut butter, honey, vanilla extract, and salt. Mix well until everything is fully incorporated and smooth.
- Step 2: Gently fold in the mini chocolate chips, making sure they are evenly distributed throughout the yogurt mixture.
- Step 3: Line a baking sheet with parchment paper. Drop spoonfuls of the yogurt mixture onto the parchment paper, creating small bite-sized portions. Alternatively, you can use a mini muffin tin for a more uniform shape.
- Step 4: Place the baking sheet (or muffin tin) in the freezer for at least 2 hours, or until the yogurt bites are completely frozen solid.
- Step 5: (Optional) Melt coconut oil in the microwave in 20 second intervals until melted, then drizzle over the bites before freezing in Step 4 for additional coating and texture.
- Step 6: Once frozen, transfer the bites to a freezer-safe bag or container for longer storage. Enjoy straight from the freezer!
