- 1 block Feta cheese (8 ounces)
- 1 English cucumber, thinly sliced
- 1 pint Cherry tomatoes, halved
- 1/2 Red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup Fresh parsley, chopped
- 3 tablespoons Extra virgin olive oil
- 2 tablespoons Red wine vinegar
Instructions
- Step 1: In a shallow dish, drizzle 1 tablespoon of olive oil and 1 tablespoon of red wine vinegar.
- Step 2: Begin assembling the salad tower by layering cucumber slices on the bottom of the dish.
- Step 3: Crumble about 1/3 of the feta cheese over the cucumber layer, followed by half of the cherry tomatoes, red onion, and Kalamata olives. Sprinkle with a portion of the fresh parsley.
- Step 4: Repeat the layering process with another layer of cucumber, crumbled feta, cherry tomatoes, red onion, olives, and parsley.
- Step 5: Finish with a final layer of cucumber, remaining feta, tomatoes, red onion, olives, and parsley.
- Step 6: Drizzle the remaining 2 tablespoons of olive oil and 1 tablespoon of red wine vinegar over the salad tower. Serve immediately or chill for later.
Notes
- To keep your feta salad tower fresh, store it covered in the refrigerator and drain any excess liquid before serving.
- Assembling this salad ahead of time is best; the flavors meld beautifully as it chills, so don't reheat.
