  • 1 block Feta cheese (8 ounces)
  • 1 English cucumber, thinly sliced
  • 1 pint Cherry tomatoes, halved
  • 1/2 Red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup Fresh parsley, chopped
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar

Instructions

  1. Step 1: In a shallow dish, drizzle 1 tablespoon of olive oil and 1 tablespoon of red wine vinegar.
  2. Step 2: Begin assembling the salad tower by layering cucumber slices on the bottom of the dish.
  3. Step 3: Crumble about 1/3 of the feta cheese over the cucumber layer, followed by half of the cherry tomatoes, red onion, and Kalamata olives. Sprinkle with a portion of the fresh parsley.
  4. Step 4: Repeat the layering process with another layer of cucumber, crumbled feta, cherry tomatoes, red onion, olives, and parsley.
  5. Step 5: Finish with a final layer of cucumber, remaining feta, tomatoes, red onion, olives, and parsley.
  6. Step 6: Drizzle the remaining 2 tablespoons of olive oil and 1 tablespoon of red wine vinegar over the salad tower. Serve immediately or chill for later.
