Ingredients
- All-purpose flour: 1 1/2 cups
- Cold unsalted butter, cubed: 1/2 cup (1 stick)
- Brown sugar: 1/4 cup
- Salt: 1/4 teaspoon
- Ripe peaches, peeled and sliced: 4 medium
- Granulated sugar: 1/2 cup
- Cornstarch: 2 tablespoons
- Lemon juice: 1 tablespoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease and lightly flour an 8×8 inch baking pan.
- Step 2: In a medium bowl, combine flour, brown sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared pan.
- Step 3: Bake the crust for 15-20 minutes, or until lightly golden. Let cool slightly.
- Step 4: In a separate bowl, gently toss the sliced peaches with granulated sugar, cornstarch, and lemon juice.
- Step 5: Arrange the peach mixture evenly over the baked crust.
- Step 6: Bake for 30-35 minutes, or until the peaches are tender and the topping is bubbly and lightly golden. Let cool completely before cutting into bars.
Notes
- Store leftover peach bars in an airtight container in the refrigerator for up to 3 days to keep them fresh.
- Gently warm a slice in the microwave for 15 seconds to enhance the peachy flavors, but avoid overheating.
- A dollop of vanilla ice cream or a sprinkle of powdered sugar makes these bars extra heavenly.
- For easier cutting, chill the bars completely before slicing and use a warm, clean knife for neat squares.
