- All-purpose flour: 1 1/2 cups
- Rolled oats: 1 cup
- Brown sugar: 3/4 cup, packed
- Baking soda: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Unsalted butter: 3/4 cup, cold and cubed
- Fresh peaches: 4 medium, peeled and sliced
- Granulated sugar: 1/4 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a large bowl, combine the flour, oats, brown sugar, baking soda, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Step 3: Press half of the oat mixture firmly into the prepared baking pan to form the crust.
- Step 4: In a separate bowl, gently toss the sliced peaches with the granulated sugar. Arrange the peaches evenly over the crust.
- Step 5: Sprinkle the remaining oat mixture evenly over the peaches.
- Step 6: Bake for 30-35 minutes, or until the topping is golden brown and the peaches are tender. Let cool completely before cutting into bars.

- Store leftover bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer freshness.
