Ingredients
- All-purpose flour: 3 cups
- Baking powder: 4 teaspoons
- Salt: 1 teaspoon
- Sugar: 1 tablespoon
- Milk: 1 1/4 cups
- Vegetable oil: 1/4 cup
- Shredded cheddar cheese: 1 cup
- Dried Italian herbs: 2 tablespoons
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Step 2: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Step 3: Add the milk and vegetable oil to the dry ingredients and stir until just combined. Do not overmix.
- Step 4: Gently fold in the shredded cheddar cheese and dried Italian herbs.
- Step 5: Pour the batter into the prepared loaf pan and spread evenly.
- Step 6: Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- To keep the bread moist, store it tightly wrapped at room temperature for up to 3 days, or freeze slices individually.
- For a warm, cheesy treat, microwave a slice for 15-20 seconds or toast lightly.
- Serve sliced Herb & Cheese Quick Bread with a smear of cream cheese or alongside a bowl of hearty soup.
- Don't overmix the batter; a few streaks of flour are okay for a tender crumb.
