Delicious hillbilly pie (poor man’s pie) recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup shortening
  • 57 tablespoons cold water
  • 1 cup white sugar
  • 1/4 cup all-purpose flour
  • 1 1/2 cups water
  • 1 teaspoon vanilla extract

Instructions

  1. Step 1: Preheat oven to 400 degrees F (200 degrees C).
  2. Step 2: In a bowl, combine 1 1/2 cups flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add cold water, mixing until dough forms a ball.
  3. Step 3: On a lightly floured surface, roll out dough to fit a 9-inch pie plate. Transfer dough to pie plate and flute edges.
  4. Step 4: In a separate bowl, combine sugar and 1/4 cup flour. Gradually stir in water until smooth. Pour mixture into pie crust.
  5. Step 5: Bake in preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake for 30-35 minutes, or until filling is set.
  6. Step 6: Remove from oven and let cool completely before serving. Stir in vanilla extract right before serving.

Notes

  • For best results, store leftover pie in the refrigerator to keep the filling firm.
  • Reheat individual slices gently in the microwave for a warm, comforting treat.
  • Serve this simple pie with a dollop of whipped cream or a scoop of vanilla ice cream for an extra touch of sweetness.
  • Don't skimp on the cooling time; this allows the filling to fully set and prevents a soggy pie.
