Instructions
- Step 1: Preheat oven to 400 degrees F (200 degrees C).
- Step 2: In a bowl, combine 1 1/2 cups flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add cold water, mixing until dough forms a ball.
- Step 3: On a lightly floured surface, roll out dough to fit a 9-inch pie plate. Transfer dough to pie plate and flute edges.
- Step 4: In a separate bowl, combine sugar and 1/4 cup flour. Gradually stir in water until smooth. Pour mixture into pie crust.
- Step 5: Bake in preheated oven for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and bake for 30-35 minutes, or until filling is set.
- Step 6: Remove from oven and let cool completely before serving. Stir in vanilla extract right before serving.
