Ingredients
Scale
- 1.5 lbs Carrots, peeled and cut into 1-inch pieces
- 2 tablespoons Olive Oil
- 2 tablespoons Balsamic Vinegar
- 1 tablespoon Honey
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Garlic Powder
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, combine the carrots, olive oil, balsamic vinegar, honey, thyme, garlic powder, salt, and pepper. Toss well to coat the carrots evenly.
- Step 3: Spread the carrots in a single layer on the prepared baking sheet.
- Step 4: Roast for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
- Step 5: Serve immediately and enjoy.
Notes
- Store leftover roasted carrots in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the carrots in a skillet over medium heat with a touch of olive oil until warmed through and slightly crisped.
- These carrots are delicious served alongside roasted chicken or pork, adding a touch of sweetness and acidity.
- For a deeper caramelized flavor, don't overcrowd the baking sheet; ensure the carrots have space to roast, not steam.
