Ingredients
Scale
- 1.5 lbs Flank or Sirloin Steak
- 1/4 cup Olive Oil (divided)
- 2 tbsp Fresh Lemon Juice
- 1 tbsp Dried Oregano
- 1 cup Dry Quinoa
- 1 cup Cherry Tomatoes (halved)
- 1 English Cucumber (diced)
- 1/2 cup Crumbled Feta Cheese
Instructions
- Step 1: In a shallow dish, combine 2 tablespoons of olive oil, the lemon juice, oregano, salt, and pepper. Place the steak in the mixture, ensuring it is fully coated. Marinate the steak for at least 30 minutes, or up to 4 hours in the refrigerator.
- Step 2: Cook the quinoa according to package instructions (typically 1 cup dry quinoa to 2 cups water/broth). Fluff with a fork and set aside, keeping warm.
- Step 3: Preheat a skillet over medium-high heat or prepare a grill. Cook the marinated steak for 4 to 6 minutes per side, depending on thickness, until it reaches the desired internal temperature (130°F for medium-rare). Remove the steak and let it rest on a cutting board for 5-10 minutes before thinly slicing against the grain.
- Step 4: While the steak rests, prepare the bowl toppings: combine the halved cherry tomatoes and diced cucumber in a small bowl, tossing with the remaining olive oil, salt, and pepper to taste.
- Step 5: Assemble the Mediterranean Steak Bowls. Divide the cooked quinoa evenly among serving bowls. Arrange the sliced steak over the quinoa, then top with the tomato and cucumber mixture, and sprinkle generously with crumbled feta cheese.
Notes
- For best leftovers, store the cooked steak and quinoa separately from the tomato, cucumber, and feta topping, combining them just before serving or eating.
- Reheat leftover steak gently in a covered skillet over low heat or in the microwave at 50% power to prevent it from drying out before adding it back to the warmed quinoa.
- Elevate the bowl's brightness by drizzling a touch of Tzatziki sauce or a quick fresh squeeze of lemon juice over the final assembly right before serving.
- Always remember to slice the flank or sirloin steak thinly against the grain after resting; this breaks up the muscle fibers and ensures maximum tenderness in every bite.
