Ingredients
- Ground beef: 1 pound
- Taco seasoning: 1 packet
- Water: 1/2 cup
- Corn tortillas: 8
- Refried beans: 1 (16 ounce) can
- Shredded cheddar cheese: 2 cups
- Salsa: 1 cup
- Sour cream: 1/2 cup
Instructions
- Step 1: Preheat oven to 350 degrees F (175 degrees C).
- Step 2: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease. Stir in the taco seasoning and water. Simmer for 5 minutes.
- Step 3: In a 9×13 inch baking dish, spread a thin layer of refried beans. Top with 2 tortillas, overlapping if necessary to cover the bottom of the dish.
- Step 4: Spread half of the beef mixture over the tortillas, then sprinkle with 1/3 of the cheddar cheese and drizzle with 1/3 of the salsa. Repeat layers: refried beans, 2 tortillas, remaining beef, 1/3 cheddar, 1/3 salsa.
- Step 5: Top with the remaining tortillas, salsa, and cheddar cheese.
- Step 6: Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly. Let stand for 10 minutes before cutting and serving. Top with sour cream before serving.
Notes
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
- For best results when reheating, cover with foil and bake at 350°F until warmed through to prevent the tortillas from drying out.
- Serve with a side of guacamole or your favorite hot sauce to really kick up the flavor.
- To prevent soggy tortillas, briefly pan-fry them in a little oil before layering to give them more structure.
