Delicious mexican white trash casserole recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chiles, undrained
  • 1 (8 ounce) package shredded cheddar cheese
  • 1 (11 ounce) bag Doritos, crushed
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions

Instructions

  1. Step 1: Preheat oven to 350 degrees F (175 degrees C).
  2. Step 2: Brown ground beef in a skillet over medium heat. Drain off any excess grease. Stir in taco seasoning according to package directions.
  3. Step 3: In a large bowl, combine the cooked ground beef mixture, cream of mushroom soup, and diced tomatoes and green chiles. Mix well.
  4. Step 4: Spread half of the crushed Doritos in the bottom of a 9×13 inch baking dish. Pour the ground beef mixture over the Doritos.
  5. Step 5: Top with the remaining crushed Doritos and sprinkle with shredded cheddar cheese.
  6. Step 6: Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly. Garnish with sour cream and green onions before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days, but be warned the Doritos will soften over time.
  • For best results, reheat individual portions in the microwave or in a skillet to help the Doritos regain some crispness.
  • Serve with a side of guacamole and your favorite hot sauce for an extra kick!
  • To prevent soggy Doritos, consider adding a layer of refried beans between the bottom chips and the beef mixture.
