- 1.5 lbs Yukon Gold potatoes, cubed
- 1 lb Chicken sausage, sliced
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1 cup shredded cheddar cheese
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- Step 2: In a large bowl, toss the cubed potatoes, sliced chicken sausage, chopped onion, and chopped red bell pepper with olive oil, minced garlic, and Italian seasoning. Season with salt and pepper to taste.
- Step 3: Spread the mixture evenly onto the prepared baking sheet.
- Step 4: Bake for 30-35 minutes, or until the potatoes are tender and the sausage is cooked through, flipping halfway.
- Step 5: Remove from the oven and sprinkle the shredded cheddar cheese evenly over the bake.
- Step 6: Return to the oven for another 5 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or a skillet until warmed through.
- Serve with a dollop of sour cream or a side of steamed broccoli for a complete meal.
- For extra crispy potatoes, parboil them for 5 minutes before tossing with the other ingredients.
