Ingredients
Scale
- 1 pound sharp cheddar cheese, shredded
- 8 ounces cream cheese, softened
- 4 ounces jarred pimentos, drained and chopped
- 1/2 cup mayonnaise
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
Instructions
- Step 1: In a large bowl, combine the shredded cheddar cheese and softened cream cheese.
- Step 2: Add the chopped pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, and black pepper to the bowl.
- Step 3: Mix all ingredients together until well combined and smooth. Be careful not to overmix.
- Step 4: Taste and adjust seasonings as needed, adding more cayenne for extra spice or mayonnaise for a creamier consistency.
- Step 5: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Step 6: Serve with crackers, celery sticks, or your favorite dippers.
Notes
- For the best flavor, let the pimento cheese chill in the fridge for at least 2 hours (or even overnight!) before serving.
- Paula's trick: Add a splash of pickle juice for a Southern tang that'll keep everyone coming back for more.
- This pimento cheese is fantastic in grilled cheese sandwiches – the creamy texture melts beautifully!
- Store leftover pimento cheese in an airtight container in the refrigerator for up to one week, but good luck making it last that long.
