Instructions
- Step 1: Pour the Chex cereal into a very large bowl (or two standard large bowls) and set aside. In a large zip-top plastic bag, combine the confectioners' sugar and the instant pistachio pudding mix, shaking until thoroughly combined; set the bag aside.
- Step 2: Combine the chocolate chips, peanut butter, and butter in a microwave-safe bowl. Heat on high power for 60-90 seconds, stirring halfway through, until the mixture is smooth and completely melted. Stir in the vanilla powder until fully incorporated.
- Step 3: Pour the melted chocolate and peanut butter mixture over the prepared cereal. Gently fold the mixture using a rubber spatula until all the cereal pieces are evenly coated. Work quickly before the chocolate hardens.
- Step 4: Transfer the coated cereal into the large zip-top bag containing the pistachio sugar mixture. Seal the bag tightly and shake vigorously for 1-2 minutes until every piece of cereal is completely coated in the green sugar mixture.
- Step 5: Spread the finished Pistachio Puppy Chow onto a parchment-lined baking sheet or wax paper in a single layer to cool. Sprinkle the finely chopped pistachios over the mixture. Allow to cool completely (about 15-20 minutes) before serving or storing in an airtight container.
