  • Sourdough discard 1 cup (225g)
  • All-purpose flour 2 cups (250g), plus more for dusting
  • Olive oil 2 tablespoons, plus more for drizzling
  • Garlic powder 1 teaspoon
  • Italian seasoning 1 teaspoon
  • Salt 1 teaspoon
  • Shredded mozzarella cheese 1 cup (113g)
  • Grated Parmesan cheese 1/4 cup (25g)

Instructions

  1. Step 1: Preheat your oven to 425°F (220°C). Lightly grease a large baking sheet or line it with parchment paper.
  2. Step 2: In a large bowl, combine the sourdough discard, flour, olive oil, garlic powder, Italian seasoning, and salt. Mix until a shaggy dough forms.
  3. Step 3: Turn the dough out onto a lightly floured surface and knead for 3-5 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add a little more flour, 1 tablespoon at a time.
  4. Step 4: Roll the dough out into a large rectangle, about 1/4 inch thick. Sprinkle the mozzarella and Parmesan cheese evenly over the dough.
  5. Step 5: Using a pizza cutter or knife, cut the dough into strips about 1 inch wide. Twist each strip and place them on the prepared baking sheet.
  6. Step 6: Drizzle the breadsticks with a little olive oil and bake for 12-15 minutes, or until golden brown and the cheese is melted and bubbly. Let cool slightly before serving.

Notes

  • Store cooled breadsticks in an airtight container at room temperature for up to 2 days, or freeze for longer storage.
  • To reheat, warm the breadsticks in a 350°F (175°C) oven for a few minutes until heated through and the cheese is melty again.
