Instructions

  1. Step 1: Fry the plantains. Heat 1/4 cup of olive oil in a large skillet or deep fryer over medium-high heat. Fry the plantain pieces in batches until golden brown and slightly softened, about 5-7 minutes per batch. Remove with a slotted spoon and set aside to drain on paper towels.
  2. Step 2: Mash the plantains. Using a pilón (mortar and pestle), a potato ricer, or even a sturdy bowl and fork, begin mashing the fried plantains. Add the minced garlic, salt, and pepper. Continue mashing until the plantains are mostly smooth but still have some texture.
  3. Step 3: Incorporate the Chicharrón. Add the chopped pork cracklings (chicharrón) to the mashed plantains and continue mashing and mixing until well incorporated.
  4. Step 4: Add Flavor and Moisture. Gradually add the remaining 1/4 cup of olive oil, butter, and chicken broth to the mofongo mixture. Continue mashing and mixing until the mofongo reaches a slightly moist and pliable consistency. Adjust salt and pepper to taste.
  5. Step 5: Shape and Serve. Form the mofongo into individual mounds or a larger serving dish. Serve immediately while hot, traditionally with a criolla sauce or broth-based stew.
