- Large yellow onions 2
- Granny Smith apples 2
- Olive oil 2 tablespoons
- Beef broth 1 cup
- Dried thyme 1 teaspoon

Instructions
- Step 1: Season beef chops generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
- Step 2: Sear beef chops for 3-4 minutes per side, until browned. Remove chops from skillet and set aside.
- Step 3: Thinly slice onions and apples. Add butter to the skillet and sauté onions until softened and translucent, about 5-7 minutes. Add apples and cook for another 3-5 minutes until slightly softened.
- Step 4: Stir in dried thyme and then pour in beef broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Step 5: Return beef chops to the skillet, nestling them among the apples and onions. Reduce heat to low, cover, and simmer for 20-25 minutes, or until beef chops are cooked through and tender.
