Ingredients

  • Chicken sausage, sliced: 4 oz
  • Eggs: 2 large
  • Baby spinach or mixed greens: 2 cups
  • Olive oil: 1 tablespoon
  • Cherry tomatoes, halved: 1/2 cup
  • Feta cheese, crumbled: 2 tablespoons
  • Everything bagel seasoning: 1/2 teaspoon
  • Salt and pepper: to taste

Instructions

  1. Step 1: Heat olive oil in a non-stick skillet over medium heat. Add the sliced chicken sausage and cook until browned and heated through, about 5-7 minutes. Remove sausage from skillet and set aside.
  2. Step 2: In the same skillet, crack the eggs and cook to your desired doneness (scrambled, over easy, etc.). Season with salt and pepper.
  3. Step 3: While the eggs are cooking, gently wilt the spinach or mixed greens in a separate bowl. You can microwave them for 30-60 seconds or steam them lightly until they soften.
  4. Step 4: Assemble the breakfast bowl. Place the wilted greens in the bottom of the bowl. Top with the cooked chicken sausage, eggs, and halved cherry tomatoes.
  5. Step 5: Sprinkle the feta cheese and everything bagel seasoning over the bowl. Season with additional salt and pepper, if desired. Serve immediately.
