Ingredients
- Chicken breasts: 2 (about 6 oz each)
- Smoky paprika: 2 teaspoons
- Heavy cream: 1 cup
- Fettuccine pasta: 8 oz
- Green beans: 1 pound
- Feta cheese: 4 oz
- Lemon: 1 (zest and juice)
- Garlic cloves: 2, minced
Instructions
- Step 1: Prepare the chicken. Rub chicken breasts with smoky paprika, salt, and pepper. Grill or pan-fry over medium-high heat until cooked through (internal temperature reaches 165°F). Let rest for 5 minutes, then slice.
- Step 2: Char the green beans. Toss green beans with olive oil, salt, and pepper. Grill or pan-fry over high heat until slightly charred and tender-crisp, about 5-7 minutes.
- Step 3: Cook the pasta. Cook fettuccine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- Step 4: Make the Alfredo sauce. In the same pan, melt 2 tablespoons butter. Add minced garlic and cook until fragrant. Pour in heavy cream and bring to a simmer. Add salt, pepper and grated Parmesan cheese (about 1/2 cup) and stir until the cheese is melted and the sauce has thickened slightly. Add a little pasta water to adjust the consistency as needed.
- Step 5: Prepare the Lemon Feta Whip. In a food processor, combine feta cheese, 1 tablespoon lemon juice, and lemon zest. Blend until smooth and whipped. Add a tablespoon or two of water if needed to reach desired consistency.
- Step 6: Assemble and serve. Toss cooked pasta with Alfredo sauce. Top with sliced smoky paprika chicken and charred green beans. Dollop with Lemon Feta Whip and serve immediately.
Notes
- Store leftover components separately to prevent the pasta from becoming soggy in the sauce.
- Reheat the Alfredo sauce gently over low heat, adding a splash of milk or cream to restore its creamy consistency.
- Garnish with a sprinkle of extra smoky paprika and fresh parsley for a vibrant presentation.
- For an extra burst of flavor, try marinating the chicken in a mixture of smoky paprika, olive oil, and lemon juice for at least 30 minutes before cooking.
