Ingredients
- All-purpose flour: 2 1/4 cups
- Granulated sugar: 1 cup
- Unsalted butter, softened: 1/2 cup (1 stick)
- Vegetable shortening: 1/2 cup
- Large egg: 1
- Cotton candy flavoring extract: 1 teaspoon
- Baking soda: 1 teaspoon
- Pink food coloring: Few drops (optional)
Instructions
- Step 1: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Step 2: In a large bowl, cream together the softened butter, shortening, and granulated sugar until light and fluffy. Beat in the egg and cotton candy flavoring.
- Step 3: In a separate bowl, whisk together the flour and baking soda. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in pink food coloring if desired.
- Step 4: Drop by rounded tablespoons onto the prepared baking sheets, leaving space between each cookie.
- Step 5: Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For ultimate softness, store cooled cookies in an airtight container with a slice of white bread.
- A quick zap in the microwave (5-10 seconds) will bring back that freshly baked chewiness.
- Serve these whimsical cookies with a scoop of vanilla ice cream for a fun and flavorful dessert.
- Don't overmix the dough after adding the flour; this keeps the cookies tender and prevents them from becoming tough.
