Ingredients
- Carrots, peeled and sliced: 1 pound
- Olive oil: 2 tablespoons
- Honey: 2 tablespoons
- Red pepper flakes: 1/2 teaspoon (or more to taste)
- Garlic, minced: 2 cloves
- Salt: 1/4 teaspoon
- Black pepper: 1/4 teaspoon
- Crumbled feta cheese: 2 ounces
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a bowl, toss the sliced carrots with olive oil, honey, red pepper flakes, minced garlic, salt, and pepper until evenly coated.
- Step 3: Spread the carrots in a single layer on the prepared baking sheet.
- Step 4: Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and slightly caramelized, flipping halfway through.
- Step 5: Remove from oven and sprinkle with crumbled feta cheese.
Notes
- Leftover carrots can be stored in an airtight container in the fridge for up to 3 days, but the cheese may soften.
- For best results, reheat gently in a skillet over medium-low heat to prevent the honey from burning.
- Serve these spicy-sweet carrots as a vibrant side dish alongside roasted chicken or grilled fish.
- Don't overcrowd the baking sheet; giving the carrots space allows them to caramelize properly for maximum flavor.
