Ingredients
- Salmon fillets: 2 (6-ounce)
- Sriracha: 2 tablespoons
- Honey: 2 tablespoons
- Soy sauce: 1 tablespoon
- Rice vinegar: 1 teaspoon
- Sesame oil: 1 teaspoon
- Cooked rice: 2 cups
- Broccoli florets: 1 cup, steamed
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a small bowl, whisk together sriracha, honey, soy sauce, rice vinegar, and sesame oil.
- Step 3: Place salmon fillets on the prepared baking sheet. Brush the sriracha honey mixture evenly over the salmon.
- Step 4: Bake for 12-15 minutes, or until salmon is cooked through and flakes easily with a fork.
- Step 5: Divide cooked rice between two bowls. Top with baked salmon and steamed broccoli.
Notes
- Store leftover salmon separately from the rice and broccoli in airtight containers in the refrigerator for up to 2 days.
- For best results, gently reheat the salmon in a skillet over low heat to prevent it from drying out.
- Garnish your bowl with a sprinkle of sesame seeds and a drizzle of extra sriracha for added flavor and visual appeal.
- Don't overcrowd the baking sheet; if needed, use two sheets to ensure the salmon browns properly.
