- Cooked Chicken, shredded 2 cups
- Frozen Corn 2 cups
- Cream Cheese, softened 8 ounces
- Sour Cream 1 cup
- Mayonnaise 1/2 cup
- Taco Seasoning 2 tablespoons
- Shredded Cheddar Cheese 1 cup
- Crushed Tortilla Chips 1 cup
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Step 2: In a large bowl, combine the shredded chicken, frozen corn, softened cream cheese, sour cream, mayonnaise, and taco seasoning. Mix well until everything is evenly distributed.
- Step 3: Spread the chicken mixture evenly into the prepared baking dish.
- Step 4: Sprinkle the shredded cheddar cheese evenly over the top of the chicken mixture.
- Step 5: Top the cheese with the crushed tortilla chips.
- Step 6: Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through. Let cool slightly before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat individual portions in the microwave or oven until warmed through.
- Garnish with a sprinkle of fresh cilantro and a squeeze of lime juice for extra street corn flavor.
- To prevent soggy chips, add the crushed tortilla chips during the last 5 minutes of baking.
