- Popcorn kernels: 1/2 cup

- Brown sugar: 1 cup, packed
- Light corn syrup: 1/4 cup
- Vanilla extract: 1 teaspoon

- Vegetable oil: 2 tablespoons
Instructions
- Step 1: Pop the popcorn. Using a popcorn popper or stovetop method with vegetable oil, pop the popcorn kernels according to instructions. Remove any unpopped kernels and set the popcorn aside in a large bowl.
- Step 2: Make the caramel. In a medium saucepan, melt the butter over medium heat. Add the brown sugar and corn syrup, stirring constantly until the sugar is dissolved and the mixture begins to bubble.
- Step 3: Cook the caramel. Continue to cook the caramel mixture, without stirring, until it reaches a firm-ball stage (245°F-250°F on a candy thermometer), approximately 5-7 minutes. If you don't have a thermometer, test by dropping a small amount into cold water; it should form a firm, but still pliable, ball.
- Step 4: Add flavorings. Remove the caramel from the heat and quickly stir in the vanilla extract, baking soda, and salt. The mixture will foam up slightly.
- Step 5: Combine and cool. Immediately pour the caramel over the popped popcorn. Gently toss to coat all the popcorn evenly.
- Step 6: Spread and set. Spread the coated popcorn onto a baking sheet lined with parchment paper or a silicone mat. Allow the popcorn treat to cool completely before breaking it into pieces and serving.
