Ingredients
- Greek Yogurt, plain (or vanilla): 2 cups
- Honey or Maple Syrup: 2 tablespoons
- Blue Spirulina Powder: 1/2 teaspoon
- Pink Pitaya Powder (Dragon Fruit Powder): 1/2 teaspoon
- Freeze-Dried Strawberries, crushed: 1/4 cup
- Edible Glitter: 1 teaspoon
- Rainbow Sprinkles: 2 tablespoons
- White Chocolate Chips (melted): 2 tablespoons (optional)
Instructions
- Step 1: Line a baking sheet with parchment paper. This will prevent the yogurt bark from sticking.
- Step 2: In a large bowl, mix together the Greek yogurt and honey (or maple syrup) until well combined and smooth.
- Step 3: Divide the yogurt mixture into two smaller bowls. In one bowl, add the blue spirulina powder and stir until the yogurt is evenly colored. In the second bowl, add the pink pitaya powder and stir until evenly colored.
- Step 4: Spread the plain yogurt (if you didn't use vanilla) in a thin, even layer on the prepared baking sheet. Drop spoonfuls of the blue and pink yogurt mixtures randomly over the plain yogurt base. Use a knife or spatula to swirl the colors together gently, creating a marbled effect.
- Step 5: Sprinkle the crushed freeze-dried strawberries, edible glitter, and rainbow sprinkles evenly over the yogurt mixture. If using, drizzle the melted white chocolate over the top as well.
- Step 6: Freeze the yogurt bark for at least 2-3 hours, or until completely frozen solid. Once frozen, break the bark into pieces and store in an airtight container in the freezer. Enjoy your magical Unicorn Bark!
Notes
- Store leftover unicorn bark in the freezer for up to a month, but its vibrant colors are best preserved if eaten within a week.
- Unicorn bark is best enjoyed straight from the freezer for a refreshing and crunchy treat – no reheating needed!
- Serve broken pieces of unicorn bark as a fun and healthy dessert alternative or a colorful addition to a yogurt parfait.
- For the prettiest swirls, don't overmix the colored yogurt into the base – a few gentle swipes will create a magical marbled effect.
