Delicious unstuffed peppers skillet recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Ground beef: 1 pound
  • Bell peppers (various colors), chopped: 3 medium
  • Onion, chopped: 1 medium
  • Cooked rice: 1 cup
  • Diced tomatoes: 1 (14.5 ounce) can
  • Tomato sauce: 1 (8 ounce) can
  • Italian seasoning: 1 tablespoon
  • Shredded mozzarella cheese: 1 cup

Instructions

  1. Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Step 2: Add the chopped bell peppers and onion to the skillet with the ground beef. Cook until softened, about 5-7 minutes.
  3. Step 3: Stir in the cooked rice, diced tomatoes (undrained), tomato sauce, and Italian seasoning. Bring to a simmer.
  4. Step 4: Reduce heat to low, cover, and simmer for 10-15 minutes, stirring occasionally, until flavors are combined.
  5. Step 5: Remove from heat and stir in half of the mozzarella cheese.
  6. Step 6: Sprinkle the remaining mozzarella cheese over the top of the skillet. Cover and let stand until the cheese is melted, about 2-3 minutes. Serve hot.

Notes

  • For easier cleanup, use a non-stick skillet to prevent sticking during simmering.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat individual portions in the microwave or larger amounts in a skillet over low heat, adding a splash of water if needed.
  • Serve this comforting dish with a dollop of sour cream or Greek yogurt for added tang and creaminess.
