Ingredients
- Ground beef: 1 pound
- Bell peppers (various colors), chopped: 3 medium
- Onion, chopped: 1 medium
- Cooked rice: 1 cup
- Diced tomatoes: 1 (14.5 ounce) can
- Tomato sauce: 1 (8 ounce) can
- Italian seasoning: 1 tablespoon
- Shredded mozzarella cheese: 1 cup
Instructions
- Step 1: Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Step 2: Add the chopped bell peppers and onion to the skillet with the ground beef. Cook until softened, about 5-7 minutes.
- Step 3: Stir in the cooked rice, diced tomatoes (undrained), tomato sauce, and Italian seasoning. Bring to a simmer.
- Step 4: Reduce heat to low, cover, and simmer for 10-15 minutes, stirring occasionally, until flavors are combined.
- Step 5: Remove from heat and stir in half of the mozzarella cheese.
- Step 6: Sprinkle the remaining mozzarella cheese over the top of the skillet. Cover and let stand until the cheese is melted, about 2-3 minutes. Serve hot.
Notes
- For easier cleanup, use a non-stick skillet to prevent sticking during simmering.
