Ingredients
- Ground beef: 1 pound
- Onion, chopped: 1 medium
- Taco seasoning: 1 packet
- Refried beans: 1 (16-ounce) can
- Flour tortillas: 6 large
- Cheddar cheese, shredded: 2 cups
- Enchilada sauce: 2 (10-ounce) cans
- Sour cream: 1 cup
Instructions
- Step 1: Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
- Step 2: Add the chopped onion and taco seasoning to the skillet with the ground beef. Cook until the onion is softened, about 5 minutes.
- Step 3: Warm the refried beans in a saucepan or microwave.
- Step 4: Lay out a tortilla. Spread a layer of refried beans and then a layer of the ground beef mixture down the center of each tortilla. Sprinkle with shredded cheddar cheese. Fold in the sides and roll up tightly.
- Step 5: Place the filled burritos seam-down in a baking dish. Pour the enchilada sauce evenly over the burritos. Sprinkle the remaining cheddar cheese on top.
- Step 6: Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is heated through. Serve immediately with sour cream.
Notes
- To prevent soggy burritos, let the beef mixture cool slightly before assembling.
- For best results, reheat individual burritos in the microwave with a damp paper towel on top to keep the tortilla soft.
- Garnish with chopped cilantro and diced tomatoes for a pop of fresh flavor and vibrant color.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
