Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray.
- Step 2: In a large bowl, combine the shredded chicken, softened cream cheese, taco seasoning, cheddar cheese, Monterey Jack cheese, and green onions. Mix well until all ingredients are evenly distributed.
- Step 3: Warm the tortillas slightly in the microwave for about 15-20 seconds to make them more pliable and prevent cracking.
- Step 4: Spoon about 2-3 tablespoons of the chicken mixture onto the center of each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
- Step 5: Lightly spray the taquitos with cooking spray.
- Step 6: Bake for 15-20 minutes, or until the taquitos are golden brown and crispy. Serve immediately with your favorite toppings like salsa, sour cream, or guacamole.

- Store leftover taquitos in an airtight container in the refrigerator for up to 3 days.
