Ingredients
- Fresh or frozen blackberries, 6 cups
- All-purpose flour, 1 cup
- Granulated sugar, 1 cup
- Baking powder, 2 teaspoons
- Salt, 1/4 teaspoon
- Milk, 1/2 cup
- Melted butter, 1/2 cup
- Vanilla extract, 1 teaspoon
Instructions
- Step 1: Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Step 2: In a large bowl, combine blackberries with 1/4 cup of the sugar. Pour into the prepared baking dish.
- Step 3: In a separate bowl, whisk together flour, remaining 3/4 cup sugar, baking powder, and salt.
- Step 4: Add milk, melted butter, and vanilla extract to the dry ingredients. Stir until just combined. Do not overmix.
- Step 5: Drop spoonfuls of the batter evenly over the blackberries.
- Step 6: Bake for 30-40 minutes, or until the topping is golden brown and the blackberry filling is bubbly. Let cool slightly before serving.
Notes
- Store leftover blackberry cobbler in the refrigerator, covered, for up to 3 days.
- Reheat individual portions in the microwave for 30-60 seconds, or until warmed through.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra-delicious treat.
- For an even more tender cobbler topping, gently fold the wet ingredients into the dry until *just* combined; a few lumps are perfectly fine!
