- 4 large orange bell peppers
- 1 pound ground beef or turkey
- 1 medium onion, chopped
- 1 (15-ounce) can tomato sauce
- 1 cup cooked rice
- 1 cup shredded cheddar cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Step 1: Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Carve jack-o'-lantern faces into the peppers using a sharp knife.
- Step 2: In a large skillet, brown the ground beef or turkey over medium heat. Drain off any excess grease.
- Step 3: Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the tomato sauce, cooked rice, Italian seasoning, salt, and pepper.
- Step 4: Stuff the bell peppers with the meat mixture. Place the stuffed peppers in a baking dish.
- Step 5: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and sprinkle the peppers with shredded cheddar cheese. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
Notes
- Store leftover stuffed peppers in an airtight container in the refrigerator for up to 3 days.
- To reheat, cover the pepper loosely with foil and bake at 350°F (175°C) until warmed through, or microwave in short bursts.
- Serve these festive peppers with a dollop of sour cream or guacamole for extra flavor and a creamy texture.
- For easier carving, use a small paring knife and sketch your jack-o'-lantern face lightly onto the pepper first.
