  • 4 large orange bell peppers
  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 1 (15-ounce) can tomato sauce
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Carve jack-o'-lantern faces into the peppers using a sharp knife.
  2. Step 2: In a large skillet, brown the ground beef or turkey over medium heat. Drain off any excess grease.
  3. Step 3: Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the tomato sauce, cooked rice, Italian seasoning, salt, and pepper.
  4. Step 4: Stuff the bell peppers with the meat mixture. Place the stuffed peppers in a baking dish.
  5. Step 5: Cover the baking dish with foil and bake for 30 minutes. Remove the foil and sprinkle the peppers with shredded cheddar cheese. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the peppers are tender.
