  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Shrimp (peeled & deveined) – 1 pound
  • Lobster meat (cooked) – 1/2 pound
  • Cheddar Bay Biscuit Mix – 1 box
  • Heavy cream – 1 cup
  • Frozen peas and carrots – 1 cup
  • Butter – 4 tablespoons
  • All-purpose flour – 2 tablespoons
  • Shredded cheddar cheese – 1/2 cup

Instructions

  1. Step 1: Preheat oven to 400°F (200°C). In a large skillet, melt butter over medium heat. Whisk in flour until smooth, then gradually whisk in heavy cream until thickened.
  2. Step 2: Add the shrimp, lobster meat, peas, and carrots to the skillet. Stir to combine and simmer for 5-7 minutes, or until the shrimp is pink and cooked through. Season with salt and pepper to taste.
  3. Step 3: Prepare the Cheddar Bay Biscuit Mix according to package directions. Stir in the shredded cheddar cheese into the biscuit dough.
  4. Step 4: Pour the shrimp and lobster mixture into a 9-inch pie dish.
  5. Step 5: Drop spoonfuls of the Cheddar Bay Biscuit dough evenly over the shrimp and lobster mixture, covering the top.
  6. Step 6: Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and cooked through. Let cool slightly before serving.

Notes

  • Store leftover pot pie in the refrigerator for up to 3 days in an airtight container.
  • Reheat individual pot pie slices in the microwave or oven until warmed through, adding a splash of cream if needed to prevent dryness.
  • Serve this decadent pot pie with a simple side salad to balance the richness.
  • For extra flavor, sauté a minced clove of garlic with the butter before adding the flour to the skillet.
