  • 1/4 cup honey
  • 2 tablespoons chipotle peppers in adobo sauce, finely minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1/4 cup fresh lime juice (divided)
  • 12 small corn or flour tortillas

Instructions

  1. Step 1: Preheat the oven to 400°F (200°C). In a small bowl, whisk together the honey, minced chipotle peppers in adobo, olive oil, ground cumin, and kosher salt. Reserve half of this mixture for serving.
  2. Step 2: Place the salmon fillet on a parchment-lined baking sheet. Brush the salmon generously with half of the remaining glaze (reserving the second half for brushing during cooking). Bake for 12-15 minutes, or until the salmon is nearly opaque and cooked through.
  3. Step 3: For the last 2 minutes of cooking, brush the fish with the remaining glaze and switch the oven to broil until the edges are slightly caramelized. Remove from the oven and let rest for 5 minutes.
  4. Step 4: Use a fork to gently flake the salmon into bite-sized pieces, tossing them lightly with the pan juices and 1 tablespoon of the fresh lime juice.
  5. Step 5: Warm the tortillas on a dry skillet over medium heat for about 30 seconds per side until pliable. Fill each tortilla with the flaked smoky chipotle honey salmon, drizzle with the reserved glaze, and top with desired taco components (such as fresh cilantro or a cabbage slaw).

Notes

  • Store leftover flaked salmon in an airtight container for up to three days, mixing it with a tablespoon of the reserved glaze or lime juice to prevent the fish from drying out.
  • To gently reheat the salmon, skip the microwave and spread the flakes on a foil-lined baking sheet, warming them in a 300°F oven for about 5 minutes until just heated through.
